Colombia is home to an extraordinary diversity of coffee varieties, from traditional ones like Caturra and Castillo to rare gems such as Gesha, Pink Bourbon, and Tabi. Each variety has a unique genetic profile that, combined with the specific terroir of each region, produces one-of-a-kind sensory characteristics. Pink Bourbon, for example, is a natural mutation of Bourbon that produces pastel-pink cherries. Its cup profile is marked by intense floral notes, bright acidity, and a sweetness reminiscent of tropical fruit.
