The Drying Process

At this stage of the process the coffee has already been hulled, but there are still things to look for when assessing its quality. Check that the beans have a uniform color (except in natural and honey processes) and that there are no quakers or foreign objects. Drying is one of the most critical stages of the washed process. Inadequate drying can ruin months of careful work in cultivation and harvest. Temperature, relative humidity, and exposure time all shape the final cup profile. On our partner producers’ farms, drying is done on raised African beds that let air circulate around every side of the bean.
